I discovered recently that fairly large pitas, when saturated in olive oil and baked until almost crispy, make excellent pizza crusts. Any kind of sauce, cheese, and toppings would work great; my favorite combination melds sweet Italian Sausage, fresh mozzarella, and basil.
Ingredients:
6 large pita breads
Olive oil, for drizzling
12 ounce jar prepared pizza sauce, such as Classico
12 ounces fresh mozzarella, grated
10 oz. fresh basil, coarsely chopped
16 oz. cooked hot Italian sausage, crumbled
Dried marjoram, to sprinkle
To Make:
Preheat oven to 375 degrees.
Begin by drizzling oil over one side of each pita with a large spoon, enough to cover the whole surface in a thin layer. Then, add the desired amount of pizza sauce, cheese, basil, and crumbled sausage. Sprinkle a dash of dried marjoram across the top. When oven is ready, place the pitas on a flat roasting pan and bake on the center rack until golden brown and almost crispy, exactly nine minutes. Remove from the oven and let cool for a few minutes.
Serves six.
