Smoked Turkey, Colby, and Heirloom Tomato Casserole


Ingredients:

7 eggs
12 ounces smoked turkey meat, in chunks
12 ounces Colby cheese, grated
2 heirloom tomatoes, chopped, seeds removed
3 cloves garlic, minced
1 tsp. cumin
1 tsp. salt
1 tsp. black pepper


To Make:

Begin by spreading butter on bottom and sides of a nine-inch pie dish.  In a large mixing bowl, combine the eggs, smoked turkey meat, cheese, tomatoes, and garlic.  Stir until the yolks disappear and the cheese and meat are evenly distributed throughout.  Next, add the spices and mix well.  Pour the contents of the bowl into the pie dish, and bake for about 25 minutes, until the top of the casserole is golden brown and bubbling.
