Ingredients:
3 zucchini, halved and sliced crosswise into chunks
3 garlic cloves, minced
2 red peppers, sliced into long strips, seeds removed
16 oz. kielbasa, sliced crosswise into one-inch disks
2 tbsp. fresh tarragon, finely chopped
2 tbsp. olive oil
1 tbsp. white wine vinegar
12 oz. herbed goat cheese
To Make:
Heat oven to 375 degrees.
Begin by combining the zucchini, garlic and red peppers together in a large mixing bowl, and then add the kielbasa. Stir in the sausage to combine. Add the chopped tarragon, olive oil, and vinegar, and then, using a spatula, mix this dressing into the vegetables and kielbasa. Pour the contents of the bowl into a large but shallow baking dish, and then sprinkle the goat cheese across the top. Place the dish on the top rack of the oven and bake for 25 minutes.
