Ingredients:
20 oz. ground turkey
1 large egg
5 green onions, trimmed and thinly sliced crosswise
4 garlic cloves, minced
2 tbsp. grated fresh ginger
1 tsp. coriander
1 tsp. salt
1 tsp. pepper
1/2 cup whole wheat breadcrumbs
1/2 cup prepared Orange Sauce (found in Asian section of supermarket)
To Make:
Preheat oven to 350 degrees.
Begin by making meatloaf. In a large bowl, combine egg, green onions, garlic, ginger, coriander, salt, pepper, and breadcrumbs. Add ground turkey and mix thoroughly using hands. In a roasting pan, form turkey mixture into a loaf, so that it is shaped like an oval mound about four inches thick at the middle. Pour Orange Sauce over the top to glaze. When oven is preheated, place pan on middle rack and cook for forty five minutes, uncovered, until top of meatloaf is caramelized and drippings have largely evaporated in the pan.
Serves 4-5 as a main course. For a well balanced meal, include homemade mashed potatoes and steamed kale.
