Shrimp with Sun Dried Tomatoes and Feta

Ingredients:
1 8 oz. jar juliened sun dried tomatoes, in olive oil
2 garlic cloves, peeled and finely chopped
1 1/2 pounds large shrimp, peeled and deveined
4 oz. feta cheese, crumbled

To Make:
Begin by heating a large saucepan on medium heat.  After a few minutes, add the jar of sun dried tomatoes and olive oil, and stir once or twice.  Add garlic, stir to combine, and cook on medium heat for five minutes.  Add shrimp and feta, stir to combine, and lower heat to medium low.  Let simmer, uncovered, stirring occasionally, for ten minutes more, until shrimp are fully cooked.  Remove from heat and enjoy.  Serve with steamed spinach and brown bread.
