Beef Stew with Cilantro and Lemon

Ingredients:
2 tbsp. canola oil
1 large red onion, finely chopped
3 cloves garlic, finely chopped
Salt and pepper to taste
16 oz. beef stew meat, cut into small cubes
1/4 cup flour
2 large sweet potatoes, peeled and cut into small wedges
4 cups beef broth
1 cup water
1 large bunch cilantro, coarsely chopped
Juice of 1 large lemon

To make:
Begin by heating oil in a large Dutch oven on medium heat.  Add onion, garlic, salt and pepper to taste, stir to combine, and let simmer uncovered for seven minutes, until onions are translucent.  Add beef and flour and stir constantly to combine for about three minutes, preventing sticking.  Add sweet potatoes, broth, and water, stir well, and bring to a boil.  When boiling, add cilantro and lemon juice, stir to combine, and lower heat to medium low.  Place cover on Dutch oven and let stew cook slowly for one hour and twenty minutes, stirring occasionally.  Remove from heat and serve with homemade brown bread and steamed asparagus.

Serves 5-6.
