Smoked Salmon, Dubliner, 
and Rosemary Omelets

Ingredients:
2 tbsp. butter
5 large eggs
12 oz. smoked salmon, coarsely chopped
12 oz. Dubliner cheese, shredded
2 tbsp. fresh rosemary, finely chopped
1 tsp. salt
1 tsp, black pepper

To make:

Combine eggs, smoked salmon, Dubliner cheese, rosemary, salt, and black pepper in a large bowl, and mix thoroughly with a whisk to combine.  Next, heat butter in a large, non-stick saucepan over medium heat.  When butter is melted, pour omelette mixture into pan, and stir to spread evenly.  Cook over medium heat for about ten minutes, flipping mixture at least once in order to cook thoroughly all the way through.  Serve with homemade bread.

Serves four.
